2 cups spinach cut in small pieces
1 cup cooked quinoa
50g feta cheese
chopped bunch of coriander
1 tsp salt and black pepper to taste
1/2cup breadcrumbs (can leave out to make it GF)
1 tbsp turmeric powder
1 tbsp curry powder
1 tsp cumin powder
avocado for garnish
tahini to drizzle
In a mixing bowl combine all ingredients together, let rest for 10 mins.
Form patties of your desired size in your hands and set on the side.
Take a pancake pan or other nonstick pan is fine too in that case, heat the oil and place your patties in.
On a low fry for about 3 mins each side or until golden brown.
Transfer to a paper towel lined plate to cool.
Repeat this process with remaining fritters. Add a bit more oil to make sure patties don’t stick.
Serve warm with avocado slices, drizzle with a bit of tahini and olive oil and enjoy.
